Don't Panic--Quick, Easy, and Delicious Meals for Your Family

If you are like me and often need some quick fix meals for those super busy nights then you’ll want to take a look at this new cookbook  Don't Panic--Quick, Easy, and Delicious Meals for Your Family.  What drew me to this book are the “normal” recipes for things you wouldn’t ordinarily think of making.  Some of the recipes require more ingredients than others and require more time or prep but overall this book really touched my taste buds. 

The first recipe I tried was the Cheesy Potato Casserole which is a Midwest dish that’s as simple as it gets.  I had everything on hand to make this comforting and fulfilling dish. 

Cheesey Potato Casserole

1 32 oz bag of frozen hashbrowns diced or cubestyled
2 10 oz  cans of cream of celery soup
2 8 oz tubs of onion and chive cream cheese
2 1/2 cups of sharp cheddar cheese shredded and divided

Directions
Preheat oven to 400 degrees.  Microwave frozen hashbrowns in a medium bowl for 3-5 minutes, until thawed.  In a separate large bowl, mix together soup and cream cheese, and microwave on high for  3-5 minutes or until melted, checking every minute an stirring until smooth and well blended.  Add potatoes and 1 cup of cheese.  Mix until potatoes are well coated.  Pour into a 9x13 baking dish and bake uncovered for 30-35 minutes.  Top with remaining cheese and bake an additional 5 minutes. 

Serves 8 - Prep time 20 minutes - Total time 50 minutes.



The second recipe I took a whirl on was Tiramisu.  This Italian recipe took a little ingredient finding at the store but was super easy to fix.  Hubs really enjoyed this dessert and it was nice to try something new.

This recipe book also contains some helpful tips for cooking quick and easy like pantry staples to have on hand, organizing grocery trips and more.  There are also some helpful picture codes in the book that come in handy like the entertaining (wine glass) and 6 ingredients or less picture code.  The Tiramisu I made was coded under the entertainment category.

Sadly there are no food photos in the book however the titles to the recipes catch you enough that I can live without that.  From Burger Bites to Sassy Asparagus w/Sesame Seeds, this was a very helpful and down to earth cookbook!

Recreating my resume template

I recently started working outside the home again and had to create a new resume which is much harder than it seems. I was trying to sum up my life’s work history, experience and education to realize all too clearly that old age had fogged my memory!  It's important to keep a copy of your old resume or at least your employer information because believe me, the older you get, the more you forget!   A good way to do this could be to copy it to a jump drive or disk so that in the event that anything ever happened to your computer, you’d always have a copy.  I think the hardest thing for me to remember was addresses, supervisors, and phone numbers.  Good thing for the internet.

I think another important key to a good resume is having a great cover letter or introduction.  A cover letter is a little more formal whereas the introduction could be a one liner that hooks the employer or recruiter to continue to read on.  These of course will vary depending on what type of job/career you may be seeking and your personal preferences.  I highly recommend using resume templates if you are able especially if it’s been awhile since you’ve created or updated yours.  It can make a world of difference and looks more formal.  In addition, it can be a great guide should your memory be as foggy as mine.

In case you’re wondering, after I recreated my resume, I of course found the hard copy that I had printed some time ago. Amazing how that works isn’t it?

SYNOPSIS
Benjamin Mee (Damon) is a Los Angeles newspaper columnist and adventure writer who, as a single father, faces the challenges of raising his two young children.  Hoping that a fresh start and a new life will restore their family spirit, Mee quits his job and buys an old rural house outside the city with a unique bonus feature: a zoo named the Rosemoor Animal Park, where dozens of animals reside under the care of head zookeeper Kelly Foster (Johansson) and her dedicated team.  With no experience, limited time and a shoestring budget, Mee sets out with the support of his family and the local community to reopen the zoo.  Now, Benjamin is no longer reporting an adventure story; he’s living it in his own backyard.



This is one of the best family movies I've seen in awhile.  We Bought a Zoo is very heartwarming, funny, enjoyable and is a great fit for the whole family.  I love Matt Damon and he along with the child actors did amazing job in this movie.  Scarlett Johansson also stars in this movie which is another hot plus.  This is one of those movies that I would enjoy watching again and again.
